Ingredients

/2 cup melted and cooled butter or coconut oil (refined coconut oil for a neutral flavor)

1/2 cup coconut sugar

1 large egg

2 tsp vanilla extract

2 cups almond flour

1 tsp salt

1 tsp baking soda

1 cup chocolate chips (milk or dark, your choice)

Instructions

Preheat the oven to 400°F (200°C).

    In a large bowl, combine 1/2 cup of melted and cooled butter or coconut oil, 1/2 cup of coconut sugar, 1 egg, and 2 teaspoons of vanilla extract. Whisk until smooth.

      Add 2 cups of almond flour, 1 teaspoon of salt, and 1 teaspoon of baking soda to the wet mixture. Stir until a thick dough forms.

        Fold in 1 cup of chocolate chips, saving a small handful for later.

          Line a baking sheet with parchment paper. Scoop the dough onto the baking sheet using a 1 1/2 tablespoon cookie scoop or a spoon, spacing them evenly.

            Gently flatten the dough balls with your fingers.

              Press the reserved chocolate chips onto the tops of the cookies.

                Bake for 10-12 minutes, until the cookies have slightly flattened and the edges are lightly golden.

                  Let the cookies cool on the baking sheet for a few minutes before enjoying.
