Here’s what you’ll need to make this amazing gluten-free bread:

Dry yeast | 11 grams (approx. 4 ½ teaspoons) |
Psyllium husk powder (optional) | 1 tablespoon |
Maple syrup (or honey if preferred) | 3 tablespoons |
Olive oil | 3 tablespoons |
Salt | 2 teaspoons |
All-purpose gluten-free flour mix | 2 – 2 ½ cups |
Egg whites | 2 large |
Instructions
Prepare the Water and Yeast:
- Pour 1 ½ cups of water into a microwave-safe bowl.
- Heat the water in the microwave until it reaches 42°C (108°F). Use a thermometer to ensure it’s at the right temperature.
- Once heated, add 11 grams of dry yeast (approximately 4 ½ teaspoons) to the water and stir until combined.
Add Psyllium Husk (Optional):
- If your gluten-free flour mix doesn’t contain psyllium, add 1 tablespoon of psyllium husk powder to the yeast mixture.
- Psyllium husk acts as a binder and gives the dough the elasticity it needs for fluffy bread. Mix until smooth (a whisk may help if it gets clumpy).
- Let the mixture sit for about 10 minutes until it reaches a gel-like consistency.
Incorporate Sweetener, Oil, and Salt:
- Add 3 tablespoons of maple syrup (or honey if preferred) to the mixture.
- Add 3 tablespoons of olive oil and 2 teaspoons of salt.
- Stir until everything is well combined.
Mix in the Flour:
- Start by adding 2 cups of all-purpose gluten-free flour mix to the wet ingredients.
- Use a mixer to blend the dough for about 2 minutes.
- If the dough is too loose, gradually add up to ½ cup more flour until the desired consistency is achieved.
- Add Egg Whites:
- Add 2 egg whites to the dough and mix for another 2 minutes.
- Check the dough; if it still seems too loose, add a bit more flour.
- Transfer to a Loaf Pan:
- Scoop the dough into a greased loaf pan. A glass container works well; make sure it’s the right size (check the video description for exact measurements).
- Let the Dough Rise:
- Let the dough rise, uncovered, for about 30 to 45 minutes.
- Bake the Bread:
- Preheat your oven to 200°C (390°F).
- Bake the bread for 35 to 45 minutes until golden brown.
- Allow the bread to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
